Use avocado as a substitute for mayo and you get cool green egg salad sandwich yumminess.

The avocado egg salad sandwich is a new creation I just came up with this afternoon. I needed something quick and healthy for lunch and I noticed we had a bunch of hard boiled eggs available. So I started pulling things out of the fridge that sounded good for egg salad. Then I spotted some avocados.

I’ve been reading a lot about the health benefits of avocados lately. I never realized they were such a healthy food. But that’s great news to me since I have always loved their flavor.

Rather than only using them for chip dip, I’ve started to find new ways to use them in my diet. The easiest way I’ve found is to use them as a substitution for mayonnaise, creating a mashed avocado mayo. That way I am getting healthier fat for similar calories, lower cholesterol, lower sodium and more nutrients.

So I whipped up the recipe below and wanted to share. I wrote the recipe below to be just like what we had today. But I have also listed a few optional twists that would also taste pretty awesome.

My husband and I thought these avocado egg salad sandwiches were pretty tasty. They might become one of our new favorites! I have a feeling kids will like them (or hate them) since they are green and mushy. Leave a comment below and let me know what you think!

This recipe is for 2 sammies.

Ingredients

  • 4 boiled eggs, shells removed
  • ½ avocado*, peel and seed removed
  • ¼ lemon, juiced
  • dash of salt
  • dash of pepper
  • dash of Mrs. Dash, optional (it’s what I found in the cupboard)
  • lettuce
  • 4 slices of bread, toasting them is optional

Other Optional Ingredients:

  • 3-4 sprigs fresh cilantro, finely chopped
  • lime juice instead of lemon
  • 1/2 tsp chili powder
  • 1/2 tsp curry powder
  • 1 Tbsp mustard, mixed into the mixture
  • chopped chives or green onions
  • dash of your favorite hot sauce

Directions

Place eggs in a medium sized bowl. Scrape the avocado* into the same bowl.

Add your lemon juice, salt, pepper and other spices.

Mash the eggs and stir the ingredients together. I use a very large fork for this, but feel free to use your favorite mashing device. Be careful! Sometimes my eggs want to leap out of my bowl while mashing. 🙂

Toast your bread (or don’t.) Spread the avocado egg salad onto 1 slice per sandwich. Top with lettuce. Close the sandwiches and enjoy!


*Hint: I use a fork to mash the avocado while still in it’s peel. Just remove the seed and scrape the fork into the avocado a few times, mushing it into a paste. Scrape into your bowl with the eggs.
